Preparation
- Open the oyster and detach it.
- Drain the liquid and wrap the oyster in a slice of lardo nostrana, place a slice of ripe avocado on top, and spoon over the citrus vinaigrette.
- Garnish with a few sprigs of mustard cress.
- Serve in the oyster shell.
