Panettone amaretto perdu

This delicious Italian dessert consists of:

 

  • pain perdu
  • amaretto foam
  • basil jelly

Ingredients

100gButter
panettone
salt, cinnamon, and nutmeg to taste
50gSugar
splash of amaretto
40gFlour
180mlmilk

1Amaretto
15gIcing sugar
150gcream
siphon with gas cartridges
75gEgg yolk

100gWater
50gbasil leaves
200gCover jelly

Preparation

  1. Cut the panettone into slices of about 1 - 2 cm and let them dry out overnight.
  2. Melt the butter.
  3. Mix the sugar, salt, cinnamon, nutmeg, and the egg, and whisk together. While whisking, add the butter.
  4. Gradually mix in the flour, then add the milk, and finally the amaretto.
  5. Soak the panettone slices in this mixture and then fry them in butter, just like French toast.
