
Patatas Bravas
Perhaps the ultimate Spanish 'snack'. Served with a black garlic mayonnaise and a spicy tomato sauce.Serve the patatas bravas in an earthenware dish with two forks. Perfect for two people.Ingredients
700gPotatoes (dirty)
Panko
Olive oil
3Sunflower oil
1Cayenne pepper
2Garlic cloves (chopped)
1chopped onion
1Smoked paprika powder
Sugar
1Water
Pepper and salt
6Cherry tomato passata
0.5Mustard
200mlOil (neutral)
1Egg yolk
2Black garlic cloves
Preparation
- Peel the potatoes, cut them into cubes of about 4 cm, and cook until just tender (about 8 minutes).
- Let the potatoes steam dry for at least 10 minutes.
- Mix them with oil and add a small amount of panko.
- Let rest briefly, about 2 minutes.
- Fry the potatoes for about 4 minutes. For an extra crispy result, they can also be pre-fried for 5 minutes at 160°C and then finished at 180°C.
- Blend all ingredients with a hand blender until smooth. If the mixture is still a bit too thick, you can thin it with a little extra water.
- Mix the egg yolk with the mustard and the garlic.
- Whisk well.
- Make the mayonnaise by slowly adding the oil.
