1coconut purée
725gVending machine sugar
25gPectin
200gglucose syrup
20gCitric acid
Preparation
- Bring the coconut puree to a boil. Mix 100 grams of caster sugar well with the pectin.
- Sprinkle this over the coconut puree and mix well together.
- Boil for 2 to 3 minutes.
- Add 625 grams of caster sugar in 4 stages (keep stirring).
- Add the glucose. Boil the mixture up to 107°C.
- Then add the citric acid and let it dissolve.
- Pour into half-sphere molds and let cool outside the fridge until set as candies.
- Optionally garnish with coconut chips.
