Piadina

Traditional Italian dough made with, among other things, wholemeal flour.

We serve them with burrata, arugula, and Parma ham.
Tip: The dough can be prepared in advance and will keep for up to 2 days in the refrigerator.

Ingredients

500gLukewarm water
100gOlive oil or lard
0.8gBaking soda
20gSalt
1000gWhole wheat flour

Preparation

  1. Mix the flour, salt, and baking soda.
  2. Add the warm water and oil.
  3. Knead for about 10 minutes (in the stand mixer).
  4. Let it rest for about 25 minutes.
  5. Portion to the desired size (we make about 12 balls in this recipe).
  6. Roll out the balls with some flour and prick holes in them.
  7. Bake them in a non-stick pan until the desired color is achieved.
  8. Serve with toppings of your choice.
