Pie tee tartelette

Pie Tee is a small cup made of thin and crispy pastry dough.

It is traditionally filled with a mix of thinly sliced vegetables and shrimp. The cups are made with the Pie Tee tong. This recipe is for the basic batter.

Ingredients

2Eggs
100gSifted flour
110gRice flour
50gCornmeal
0.5Salt
400mlWater
Pie tang

Preparation

  1. Beat the eggs with salt (and any spices) with a whisk.
  2. Then mix in the flour, cornmeal, and rice flour one by one.
  3. Finally, mix in the water.
  4. Strain the mixture and let it rest for an hour.
  5. Heat oil to 180 ÀöC and dip the Pie Tee tongs in to warm them up.
  6. Then dip the tongs into the batter and fry to make cups (shake during frying to release the shapes).
