
Pizza base basic recipe
The basic recipe for a ‘Gourmet pizza’: a small, flavorful pizza in which we incorporate flavors into the dough and top them creatively with special ingredients.We created ten variations with surprising ingredients. Let yourself be inspired!
Tips:
- Use flavored oil instead of olive oil.
- Replace the water with, for example, beet juice, Thai broth, or coconut milk.
- Use spices, but do sauté them beforehand! It is also important to use a bit more spice than usual, as the base will mellow the flavor somewhat.
- Bases can be frozen, but roll them out first.

Preparation
- Put the flour and dry yeast in a stand mixer with a dough hook.
- Let the flour and yeast mix gently for 1 minute (to aerate).
- Add about 90% of the water and mix for about 6 minutes on low speed.
- Add the salt and increase the speed.
- Mix for another 6 minutes.
- Add the oil at the end and mix for about 1 more minute until the film layer disappears.
- Your final dough should not be warmer than 24 degrees. Check this during mixing.
- Let the dough rest for 10 minutes under plastic wrap.
- Shape the dough into small balls and let them proof in the refrigerator for at least 12 hours.
- Take the dough out of the refrigerator about 4 hours in advance.
- Bake the pizza base in the oven at about 250°C.
