Preparation
- Wash the rice and cook it for 20 minutes.
- Spoon the rice onto a tray, sprinkle with some sushi rice vinegar, and let it cool completely.
- Cut the salmon fillet into cubes.
- Clean the avocado and mango and cut them into cubes.
- Slice the cucumber and radish, and cut the spring onion into rings.
- Mix the mayonnaise with the ponzu.
- Spoon the rice into the bowls and season with some vinaigrette.
- Divide the salmon, avocado, mango, cucumber, radish, and spring onion over the bowls.
- Add the ginger and garnish with furikake and borage.
- Serve with the ponzu mayonnaise.
