
Korean Poké bowl
This Pulled Oats recipe is for approximately 25 people.Pulled Oats® is the plant-based alternative to meat. This meat substitute is made from only five ingredients (!): oats, fava beans, peas, and a little oil and salt. The product has a nice bite and a neutral flavor; this allows every chef to give it their own twist! This versatile meat substitute is delicious both cold and warm, for example in wraps, as an addition to a burrito bowl, for making a vegetarian Bolognese sauce, or great for stir-frying!

1500gAsparagus
500mlBeet juice
1kgSushi ginger
800gspinach leaves
80gSesame seeds
5kgbrown rice
1500gPulled Oats
1lKorean barbecue sauce
2kgKimchi
1kgmung beans
Preparation
- Slice the avocado, cucumber, radish, carrot, and cut the lime into wedges.
- Clean the asparagus.
- Blanch the asparagus for a few minutes until just tender.
- Soak the sushi ginger in beet juice.
- Cook the rice until done.
- Toast the sesame seeds in a pan.
- Divide the rice over the bowls.
- Add the avocado, cucumber, radish, carrot, spinach, sushi ginger, kimchi, and mung beans separately to the bowl.
- Fry the Pulled Oats with the Korean barbecue sauce until well heated and add to the bowl.
- Sprinkle everything with sesame seeds and a lime wedge.
