Oven-baked potato with Entrecote, crispy truffle kataifi, gold-sprayed cashew nuts and a gold-sprayed flower.Ingredients
Pre-cooked jacket potatoes
Crème fraîche
Pepper and salt
Beef entrecote
Kataifi dough
Truffle oil
Gold spray
Cashew nuts
Edible flower
Gold spray
Truffle cheese
Preparation
- Place the potatoes in a preheated oven at 200°C for 20 minutes.
- Remove the potatoes from the oven, cut off the top, and hollow them out.
- Cook the entrecote to medium rare and season with salt. Cut into cubes.
- Mash the potato filling and mix with the crème fraîche and the entrecote.
- Season with pepper and salt.
- Let the kataifi dough thaw.
- Loosen the dough.
- Mix in some truffle oil.
- Bake until crispy at 180°C in the oven.
- Lightly spray with the gold spray.
- Spray the cashew nuts and an edible flower with gold spray.
- Spoon the potato filling into the potato.
- Grate some truffle cheese over it and place in a preheated oven at 165°C for 8 to 10 minutes.
- Garnish with the crispy kataifi, the golden cashew nuts, and the flower.
