Preparation
- Stir a little ras el hanout into the batter.
- Cook the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
- Brown the pulled meat nicely all around.
- Blanch the asparagus in salted water.
- Toss the arugula with a little sesame dressing.
- Top the pancake with the meat, green asparagus, arugula, and crème fraîche.
- Layer the pancakes to the desired height.
- Finish with crème fraîche, red cabbage, and mustard cress.
