Nicoise style pancake

Nicoise style pancake with tuna, artichoke, haricot verts and anchovies.

Ingredients

Bimi
Haricot verts
Tuna
Tomatoes
Boiled egg
vinaigrette
olive tapenade
Anchovy
Artichoke
tomberry tomatoes

Preparation

  1. Bake the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
  2. Blanch the haricot verts and bimi and chill.
  3. Toss the haricot verts with the vinaigrette.
  4. Cut the tomatoes into brunoise.
  5. Quickly sear the tuna in a hot pan or on the barbecue and slice into pieces.
  6. Spread a thin layer of olive tapenade on the pancakes.
  7. Top the pancakes with haricot verts, artichoke, tomato, tuna, boiled egg, anchovy, and tuna.
  8. Finish by tucking a few sweet and sour tomberry tomatoes between each layer.
