Preparation
- Cook the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
- Sauté the spinach with a chopped shallot and a little garlic.
- Slice the pork belly and then cut into thick julienne strips.
- Briefly fry the pork belly in a pan and add the sliced spring onion at the end.
- Season the mixture with salt and pepper.
- Sauté the spinach.
- Top the pancakes with spinach, a layer of crème fraîche, and pork belly.
- Layer the pancakes until the desired height is reached.
- Finish with fried onions and tomberry tomatoes.
