Haricot verts
Figs
red beet powder

Butterhead lettuce
Preparation
- Add a little beet powder to the pancake batter.
- Bake the pancakes as described in the basic recipe (see basic recipe at the bottom of the page).
- Blanch the haricot verts.
- Slice the beets.
- Cut the figs into wedges, fry in oil, and caramelize with the sugar. Then chill.
- Toss the butterhead lettuce with a little dressing to taste.
- Break the goat cheese into coarse pieces.
- Top the pancakes with haricot verts, beets, figs, goat cheese, and butterhead lettuce.
- Finish with Caesar crumble and mustard cress.
