
Chocolate quenelle with marinated blackberries and raspberry meringue

150mlWater
150gSugar
1vanilla pod
1Star anise
1Lemon
1Lime
250gSilvia
125gWater
1Raspberry powder
chocolate quenelle
caramel pearl
pistachio crumble
pistachio ice cream
Preparation
- Put the water, sugar, vanilla pod, star anise, lemon and lime zest in a pan and bring to a boil.
- Let the marinade cool and then add the blackberries.
- Whip the Silvia and water for 5 minutes on the highest setting in the food processor and add the raspberry powder.
- Pipe onto parchment paper and sprinkle again with raspberry powder.
- Dry in the dehydrator.
- Place the pistachio crumble on the plate.
- Place the chocolate quenelle on top.
- Around this, arrange the marinated blackberries and caramel pearls.
- Place the pistachio ice cream next to it.
- Garnish with cress.
