Ramen with prawns and spinach

Soup + salad = ramen. Very flavorful and easy to prepare. We made this one with prawns and spinach.

Ingredients

4fish stock
2Dashi
50gwild spinach
Spring onion
100gramen noodles
Red chilies
Garlic
Chopped shallot

Preparation

  1. Sauté the prawns in oil with a little garlic and a chopped shallot.
  2. Remove the prawns and keep warm, add the spinach to the same pan and stir-fry very briefly.
  3. Cook the ramen in plenty of salted water until al dente.
  4. Finely slice the spring onion and red peppers.
  5. Bring the fish stock with the dashi just to the boil.
  6. Place the ramen together with the spring onion, red peppers, and prawns in a bowl.
  7. Top with the sautéed spinach.
  8. Pour the hot stock over and serve immediately.
