Creamy sauce with smoked curry

Ingredients

1Extra virgin olive oil/butter
200mlfull cream
2Smoked curry
1Finely chopped garlic clove
Salt
1Lemon juice/kalamansi vinegar
100mlVegetable or chicken bouillon
1Finely chopped shallot
Pepper
1Fresh coriander

Preparation

  1. Finely chop the shallot and garlic.
  2. Heat the olive oil or butter in a pan over medium heat.
  3. Add the shallot and garlic and sauté for 2 to 3 minutes until translucent and fragrant.
  4. Stir in the smoked curry and let it cook for 1 minute to release the spices' flavors.
  5. Add the stock and stir well. Let the sauce simmer for a few minutes until slightly reduced.
  6. Lower the heat and add the cream or crème fraîche.
  7. Stir until a smooth sauce forms and let it gently simmer for 5 to 7 minutes until the sauce thickens slightly.
  8. Add lemon juice or kalamansi vinegar.
  9. Season with salt and pepper.
  10. Is the sauce too thick? Add a splash of extra stock or water.
  11. Spoon the sauce over pan-fried chicken, fish, shrimp, or grilled vegetables of your choice.
  12. Optionally garnish with fresh coriander.
