
Satay shrimp skewers
A spicy and exotic preparation with the satay spice mix. Ideal for a summer meal, a barbecue, or an Asian-inspired dinner.Serving tip: delicious with basmati rice or noodles. Ingredients for 4 people.

16Large shrimp (cleaned and peeled)
2Soy sauce
1Finely chopped garlic clove
1Olive oil
2Satay spice mix
1Lime juice
1Red bell pepper
1Yellow bell pepper
1Red onion
Preparation
- In a large bowl, mix the satay spice mix with the soy sauce, honey, olive oil, finely chopped garlic, and lime juice to make a fragrant marinade.
- Add the shrimp (16-20 pieces) to the marinade and mix well.
- Cover and marinate in the refrigerator for at least 30 minutes.
- Cut the bell peppers and red onion into pieces.
- Thread the marinated shrimp, bell pepper, and red onion alternately onto wooden skewers.
- Preheat the grill pan or barbecue to medium-high heat.
- Grill the brochettes for 2 to 3 minutes per side, until the shrimp are cooked through and pink.
- Turn the skewers halfway through for even cooking.
- Optionally, brush them with some leftover marinade during grilling for extra flavor.
- Let the brochettes rest for a few minutes before serving.
- Finish with a splash of lime juice, fresh coriander, and optionally some extra soy sauce.
