Satay shrimp skewers

A spicy and exotic preparation with the satay spice mix. Ideal for a summer meal, a barbecue, or an Asian-inspired dinner.

Serving tip: delicious with basmati rice or noodles. Ingredients for 4 people.

Ingredients

2Honey
16Large shrimp (cleaned and peeled)
2Soy sauce
1Finely chopped garlic clove
1Olive oil
2Satay spice mix
1Lime juice
1Red bell pepper
1Yellow bell pepper
1Red onion

Preparation

  1. In a large bowl, mix the satay spice mix with the soy sauce, honey, olive oil, finely chopped garlic, and lime juice to make a fragrant marinade.
  2. Add the shrimp (16-20 pieces) to the marinade and mix well.
  3. Cover and marinate in the refrigerator for at least 30 minutes.
  4. Cut the bell peppers and red onion into pieces.
  5. Thread the marinated shrimp, bell pepper, and red onion alternately onto wooden skewers.
  6. Preheat the grill pan or barbecue to medium-high heat.
  7. Grill the brochettes for 2 to 3 minutes per side, until the shrimp are cooked through and pink.
  8. Turn the skewers halfway through for even cooking.
  9. Optionally, brush them with some leftover marinade during grilling for extra flavor.
  10. Let the brochettes rest for a few minutes before serving.
  11. Finish with a splash of lime juice, fresh coriander, and optionally some extra soy sauce.
