Roast of wild boar

Ingredients

wild boar rôti
3lGoose fat
1sprig of rosemary
Onion
3sprigs of thyme
Winter carrot
5Garlic cloves

Preparation

  1. Season the goose fat with rosemary, garlic, thyme, salt, and pepper.
  2. Season the rôti with salt and pepper and place in the oil.
  3. Bring the oil to 70°C and place it in an oven or holding at 95°C for 24 hours.
  4. Cool the rôti and slice it.
  5. Briefly grill or fry the slices in the oil, season with salt and pepper, and serve immediately.
