Preparation
- Season the goose fat with rosemary, garlic, thyme, salt, and pepper.
- Season the rôti with salt and pepper and place in the oil.
- Bring the oil to 70°C and place it in an oven or holding at 95°C for 24 hours.
- Cool the rôti and slice it.
- Briefly grill or fry the slices in the oil, season with salt and pepper, and serve immediately.
