
Salad of crayfish and smoked red beetroot
Airy salad with crayfish, smoked beetroot, lamb’s lettuce and green peas, finished with sesame dressing and streaks of reduced beetroot juice.Tip: You can also sell the salad as a salad with lobster and crayfish. Then place a lobster tail or claw on the salad.
Ingredients
1Butterhead lettuce
100gGreen peas
Smoked beets
Vene cress
chervil leaves
roasted sesame dressing
Lamb's lettuce
crayfish meat
Beet juice
Preparation
- Reduce the beet juice until it becomes syrupy and cool down.
- Cut the smoked beets into wedges.
- Put the butter lettuce, chervil, lamb's lettuce, peas, smoked beets, and crayfish meat in a bowl and gently mix in the roasted sesame dressing.
- Make sure the salad remains nice and airy.
- Use a brush to make stripes of beet juice on the plate, and carefully arrange the salad on top.
