Preparation
- Slice the cucumber on the mandoline.
- Vacuum the cucumber slices with salt to taste, oil, and sushi vinegar.
- Arrange the salmon on a plate.
- Place the cucumber on the salmon.
- Top with wakame and wasabi mayonnaise.
- Finish with tahoon cress, white sesame, and lemon zest.
