Pandan and yuzu meringues

Use a drop of green food coloring to give the meringues a soft green color.

Ingredients

300gWater
300gFine sugar
42galbumin protein powder
a drop
5gYuzu juice
145gpandan extract

Preparation

  1. Mix everything well with a whisk so that the albumin is well incorporated into the liquid.
  2. Then whip in the machine with a grease-free bowl and whisk until foamy.
  3. Pipe onto a baking mat and dry at 25°C (about 3 hours).
