Ingredients

Duck breast
BBQ Mexican rub
Tacos
Avonaise
Crème fraîche
Pico de gallo

Preparation

  1. Season the duck breast with the BBQ Mexican rub and cook sous-vide at 62°C for 40 minutes.
  2. Let cool and then slice into thin pieces.
  3. Briefly warm the tacos.
  4. Quickly sear the duck slices in the pan.
  5. Fill the taco with pico de gallo, duck, crème fraîche, and avonaise.
