Corn Duck

A nod to the American corn dog, but with a delicious duck sausage in crispy corn batter.

Ingredients

4gBaking soda
BBQ crunch
2.5gSalt
120gCornmeal
Oil
10gSugar
hoisin sauce
Duck sausages
1Whole egg
4.5gGaram masala
300mlButtermilk
14gHoney

Preparation

  1. Cook the duck sausages sous-vide in a little olive oil for about 60 minutes at 68°C. Let cool down.
  2. Mix the cornmeal, 00 flour, sugar, baking soda, salt, garam masala, egg, honey, and buttermilk into a smooth batter.
  3. Dip the cooled sausages in the batter and fry them at about 180°C. Continuously drizzle with oil.
  4. Glaze the fried corn duck with hoisin sauce and sprinkle with BBQ Crunch.
