
Corn Duck
A nod to the American corn dog, but with a delicious duck sausage in crispy corn batter.Ingredients

hoisin sauce
Duck sausages
1Whole egg
4.5gGaram masala
300mlButtermilk
14gHoney
Preparation
- Cook the duck sausages sous-vide in a little olive oil for about 60 minutes at 68°C. Let cool down.
- Mix the cornmeal, 00 flour, sugar, baking soda, salt, garam masala, egg, honey, and buttermilk into a smooth batter.
- Dip the cooled sausages in the batter and fry them at about 180°C. Continuously drizzle with oil.
- Glaze the fried corn duck with hoisin sauce and sprinkle with BBQ Crunch.
