Lahmacun Duck Döner

Tender duck breast, spicy sauce and fresh herbs on a warm lahmacun for the ultimate and surprising döner experience.

Ingredients

200gChicken stock
Mint
6gCumin powder
1Duck breast
Flat-leaf parsley
300gTomato pulp
Shawarma spice blend
1Lahmacun
Spring onion
Curly parsley
Olive oil
Yogurt
Salt
Lemon juice (fresh)

Preparation

  1. Season the duck breast with the shawarma spices and cook sous-vide at 62°C for 40 minutes.
  2. Cool down and slice the breast into thin pieces.
  3. Mix the tomato with the chicken stock and cumin.
  4. Reduce to a nice thick sauce.
  5. Mix the mint, parsley, and spring onion, and dress with olive oil and lemon juice.
  6. Loosen the yogurt (amount to taste) with a little salt.
  7. Fry the duck breast in oil, warm the lahmacun.
  8. Assemble the lahmacun with the duck breast, herb salad, and fresh yogurt sauce.
