Taleggio Tartelette
Savoury tartlet with taleggio cream, sweet pear, port syrup and fresh pomegranate seeds.Bites, finger food, amuse-bouches... give it a name. One thing is certain: this is how you start dinner in style.
Ingredients

250gCream
port syrup
Tartelette
4gLeaf gelatin (soaked)
Mini pears
150gTaleggio
Preparation
- Bring 125 grams of cream to a boil.
- Add the taleggio, cut into pieces, and let it melt gently.
- Add the gelatin and stir until smooth.
- Pass the mixture through a fine sieve.
- Whip the remaining 125 grams of cream until soft peaks form in the stand mixer and mix with the warm mixture to create a smooth cream.
- Cut the pear to the desired size and place in the tartelette.
- Add some syrup to taste and fill the cup with the cream.
- Finish with pomegranate seeds.
