On a lavishly filled table, this spicy cheese dip is indispensable. The soft white cheese in brine pairs well with the slight tang of sumac.

Ingredients

350gSütdiyari
3gOregano
Salt
2gSmoked paprika powder
50gSunflower oil
100gÇiftlik
5gsumac
durum
Pepper
150gPeppadew
coriander cress

Preparation

  1. Briefly blend the Sütdiyari in the food processor with the peppadew, sunflower oil, oregano, sumac, and paprika powder.
  2. Mix everything with a spatula and add the Turkish yogurt.
  3. Season with pepper and salt.
  4. Cut or punch out the durum and fry it for about 2 minutes at 180˚C.
  5. Add coriander cress.
  6. Char the peppadew with a blowtorch.
