
Onion rings with avocado
Onion rings are always a good choice, but this version with avocado is so creamy that you just can't stop eating.Ingredients
Spanish onions
nacho cheese tortilla chips
Sour cream
avocado (ripe)
Salt
fresh diced tomatoes
Chili powder
chopped parsley
Panko
Preparation
- Clean the avocado and mash the flesh. Mix in the fresh diced tomatoes. Add salt, a bit of chili powder, and chopped parsley.
- Clean the onions, slice them into rings, and gently separate the rings. Place them on a silicone mat.
- Fill the rings with the avocado mixture, smooth the top, and freeze.
- Meanwhile, finely grind panko in the food processor and beat the egg with salt.
- Dip the frozen onion rings in the egg and then in the breadcrumb mixture. Fry in oil.
- Serve with sour cream and tortilla chips.
