Vanilla éclair

Making an éclair takes a bit of practice, but with our step-by-step preparation method, it will be a success.

Ingredients

65gIcing sugar
150gwhite fondant
350gMilk
40gyellow custard powder
1Egg
35gButter
1.5Vanilla pod

Preparation

  1. First, follow the basic recipe for making an éclair.
  2. Bring the milk with 1 egg, the powdered sugar, a split vanilla pod, and the custard powder to a boil.
  3. Let this simmer gently for 2 minutes, scrape out the vanilla pod well, and stir it in along with the butter. Fill the éclair with this mixture.
  4. Glaze the éclair with a vanilla glaze. To do this, heat 45 grams of sugar syrup at 30 degrees Baumé (see basic éclair recipe) with the seeds from half a vanilla pod. Remove from the heat and stir into the white fondant.
