Preparation
- Wrap the pork cheek in thinly sliced lardo and a sage leaf, similar to a saltimbocca.
- Slice the butternut squash into thin slices using a slicer and cut these slices nicely.
- Marinate them briefly.
- Put the pumpkin cream in a piping bag and keep it warm.
- Boil the pumpkin gnocchi briefly according to the instructions on the package and then fry them briefly in a little olive oil.
- Arrange all components together on a large plate and generously garnish with the creamy mushrooms.
