Liquid olives

Process the olive juice from Caviaroli into spherical olives, or ‘liquid olives’. Perfect to serve as an olive on an amuse-bouche spoon.

Ingredients

220golive jus
4.5gGluco

1lWater
5galginate

small sieve
measuring spoon
container with clean water

Preparation

Step 2

  1. Use a hand blender to mix the alginate into the water.
  2. Make sure it is well dissolved.
  3. Then let it stand until the air bubbles are gone.
  4. Mix the gluco into the olive juice using a whisk.
