Process the olive juice from Caviaroli into spherical olives, or ‘liquid olives’. Perfect to serve as an olive on an amuse-bouche spoon.Ingredients

5galginate
small sieve
measuring spoon
container with clean water
Preparation
Step 2
- Use a hand blender to mix the alginate into the water.
- Make sure it is well dissolved.
- Then let it stand until the air bubbles are gone.
- Mix the gluco into the olive juice using a whisk.
