Sardine waffles

These crispy sardine wafers are a delicious and surprising snack with an irresistible flavor.

Recipe for approximately 20 (small) waffles.

Ingredients

5units.itemssardines
2fish stock
100gButter
100gCornmeal
salt and/or spices to taste
Finely chopped chives
5units.itemsEggs

Preparation

  1. Let the sardines drain well in a sieve.
  2. Pat dry and "crumble" into garnish. (4 to 5 sardines is enough for this recipe)
  3. Heat the stock with the butter.
  4. As soon as the butter has melted, add the cornmeal and mix well until a dough ball forms.
  5. Place the dough in the mixing bowl and let cool to room temperature.
  6. Mix in the eggs one by one until a nice batter forms.
  7. Season with salt and/or spices.
  8. Add the sardine garnish and finally the chives.
  9. Grease and preheat the waffle iron.
  10. Bake small waffles from the batter and serve warm.
