Warm foam of morels and smoked olive oil.

Ingredients

250gStock
2.5Agar
4cold gel
30smoked olive oil
100Unsweetened whipped cream
30Picudo olive oil
Dried morels

Preparation

  1. Heat the stock and let the morels infuse in it.
  2. Refrigerate overnight.
  3. Strain the morels and dissolve the agar in the cold stock.
  4. Bring to a boil while stirring.
  5. Remove from the heat and now add the cold gel.
  6. Let cool down to 40°C.
  7. Slowly emulsify with the oil as you would a mayonnaise, using a hand blender.
  8. Pour into a siphon and keep warm in a bain-marie.
