Salmon tzatziki

A salmon tzatziki mini snack with all the elements of a tzatziki incorporated.This gastrobite consists of a soy meringue, cucumber-garlic slice, slice of sour cream, smoked salmon, sweet and sour radish flower, and a cream of tarragon and yuzu.

Ingredients

20gWhole milk

500mlGrape seed oil
40gEgg white
45gFull-fat yogurt
65gbunch of tarragon
40gbaby spinach

Preparation

  1. Mix the egg white powder with the powdered sugar.
  2. Whisk in the liquids using a whisk.
  3. Whip this in the KitchenAid with a whisk attachment until airy.
  4. Pipe this onto silicone drying sheets and sprinkle the furikake over it.
  5. Dry in an oven at 50°C for about 6 hours.

  1. Mix everything with a whisk.
  2. Bring to a boil while stirring.
  3. Pour out onto 'plates' to about 1 cm thickness.
  4. Let cool and cut out rounds (the same size as the soy meringue).

  3. Let cool and cut out shapes.

  1. Mix the tarragon, baby spinach, and grapeseed oil in a thermoblender and blend for 4 minutes at 75°C. No thermoblender? First blanch the herbs and blend in a food processor with the oil.
  2. Pour through a coffee filter to obtain a green oil.
  3. Season with salt.
  4. Mix the egg white and yogurt using an immersion blender.
  5. While blending, add about 180 grams of green oil until it reaches a mayonnaise-like thickness.

  1. Slice the radish thinly, cut out in a flower shape, and marinate in sushi vinegar.
  2. Place a slice of sour cream on the meringue and then a cucumber-garlic slice on top.
  3. Place a slice of salmon on top.
  4. Finish with the tarragon cream and a flower of sweet and sour radish.
