Preparation

  1. Make a crème pâtissière with the ingredients.
  2. Strain the crème pâtissière and loosen it by stirring.

  1. Make a distillation from the olive broth.
  2. Caramelize the sugar.
  3. Deglaze with liquid.
  4. Then cook as a gel and stir well.
  5. Mix with olive crumble.
  6. Make a dark caramel and deglaze with liquid.
  7. Let cool.
