Capers are unopened flower buds that are often preserved in salt or pickled in vinegar. These non-pareil capers from Camp's are pickled in vinegar. There are eight different types of capers, of which the Non Pareilles is the smallest and most refined type. However, these capers are very difficult to harvest, and the harvesting process is very labor-intensive. This makes the non-pareil capers something to truly enjoy in a fresh salad or delicious North African and Oriental dishes.
