Vincotto is a special type of vinegar. Vincotto is made from two different grape varieties: the Negroamaro and the black Malvasia. They are cooked down to one-fifth of the volume. After this, the syrup is poured into oak barrels, together with the vinegar. Then the vinegar must age for no less than four years. This gives the vinegar a sweet and velvety taste. No colorings or preservatives are added in the process. This vinegar adds depth to dishes with meat and vegetables, but also gives a nice twist to dressings and sauces.
