100% derivative of chicory root. Dissolve in a liquid of at least 50°C to 70°C. Cool down and let 'set' for at least two hours at 5°C. Gives a 'fatty' mouthfeel and creamy texture. Suitable for use in a cream, cremeux, or reducing the fat content in, for example, a mousse. Dosage: 50 to 100 grams per 1 liter mass.
