Bavette, also called flank steak, is a beautiful piece of marbled meat. Bavette is often used in stews, but the bavette can certainly compete with a steak. During preparation, the flavor is well preserved. For extra flavor, you can optionally brush the bavette with spices and herbs. Medium-rare is the best way to enjoy bavette. Also delicious to grill on the barbecue with spices, or to use for making carpaccio.
