Tournedos is cut from the middle part of the tenderloin. Tournedos is therefore also simply called tenderloin. It is the most tender piece of meat from a beef.

Cooking tip: Fry the tournedos in plenty of butter to baste during frying, or in other words, to drizzle with the cooking juices. This way, the meat cooks more evenly.
