The flower piece is a nice, lean roast from the shoulder of the beef. It is somewhat less known, but certainly not less tasty. It is very flavorful and has a somewhat firmer texture. Remove the membrane to use the meat as lean braising steaks, for example. The flower piece is also very suitable for steak tartare and carpaccio.
