Lamb saddle, also known as lamb rack, comes from the back of the lamb. In this case, the piece of meat is free of bone. The lamb saddle has a nice subtle fat cap on top for extra flavor, but is otherwise lean and very tender in texture. Due to its shape and size, the lamb saddle is perfect to use as a (stuffed) roulade or to serve as a roast.
