The bellota meat has extra flavor due to the richly present intramuscular fat. Bellota meat comes from pigs that roam freely on grounds with many cork oaks. They feed on the acorns from these trees. This also contributes to the unique taste of the meat. The chorizo is dried for several months to intensify the flavor.
