The hunting season of the roe deer in the Netherlands is divided. From January 1 to March 15, the hunt is open for roe does, and from May 1 to September 15, hunting is allowed for roe bucks. You can find roe deer meat at HANOS under the label 'Neerlands wild'. Roe deer meat is fine-grained and therefore also suitable for goulash. Due to this fine grain, roe goulash for a stew dish needs to be cooked relatively short to achieve the optimal result.
