The turbot belongs to the flatfish. They are true bottom-dwellers. They camouflage themselves by taking on the color of the seabed. Due to their flat shape, they can hide well. Flatfish are born as roundfish, so as an upright swimming fish. As soon as they become adults, this changes: the eyes move to the side of the head and the fish lies on the other side. Emperor among fish is one of its many nicknames and relates to the excellent taste of turbot. The fish has a coarse texture and its flesh is firm and white in color.
