The halibut is known as the giant among flatfish, it can grow up to 3 meters long and live up to fifty years. It is a true predator, feeding on other fish species. Halibut has a distinctive dark green upper side, often with light green and brown spots, the belly side is white. This wild-caught fish is nicely fatty and has beautifully clear white flesh. It is wonderfully soft in taste and texture. Due to the fattiness of the halibut, the fish can be used in various ways in the kitchen. Delicious for frying, grilling, smoking, deep-frying, or steaming.
