Tongschar, despite its name, is not related to the sole. The fish belongs to the plaice family. Stone flounder or nose sole are also known names for this fish. The flounder has a distinctive skin with protruding scales. When you run your hand over it, it feels like sandpaper.
It is a tasty fish and also very affordable. A welcome addition to the gastronomic kitchen due to its refined taste with even a slight sweetness to it.
