The mullet is dark blue to black on the upper side, with a belly side that fades to white. The sides of the fish are adorned with a distinct blue/black lining. The fish can grow up to about 90 centimeters long and weigh 8 kilos. Mullet primarily feeds on plankton, algae, and seaweeds, as well as the occasional shellfish it ingests. The fish has sturdy bones and is not bony, making it easy to fillet. The flesh of a mullet is firm and white and slightly fattier than that of the average white fish. The taste depends on the diet of the fish, with the type of algae most consumed determining the flavor. Mullet is suitable for frying, grilling, smoking, and steaming.
