The sole is perhaps the most well-known and coveted flatfish. The fish is recognizable by its beautiful oval shape, with a round head. The fish has a reddish-brown color, which serves as camouflage when the fish searches for food at night. During the day, the fish lies buried in the sand on the seabed. Sliptong are young soles that are so small they could slip through the mesh of the net and measure around 25 centimeters. Sliptong has deliciously tender flesh and a delicate, juicy flavor and is suitable for drying, steaming, frying, and grilling.
