Yellowfin tuna, named for its distinctive yellow belly and dorsal fin, can reach a maximum length of 230 cm and a maximum weight of 180 kilos. To prevent overfishing, these tuna are caught in a sustainable manner, namely with pole & line and long-line technique. They are then immediately processed on board and subsequently stored frozen. After thawing, the tuna can be used raw again, for example for sushi and sashimi.
